Approximately 14% of the global food industry’s edible side streams go to waste before reaching consumers. BioMush’s innovative solid-state fermentation technology addresses this challenge by converting low-value, hard-to-process by-products into premium, clean-label umami flavour solutions. This pioneering technology not only enhances taste but also emphasizes sustainability, resource efficiency, and a reduction in food industry waste.
New horizons for flavour management
BioMush’s proprietary solid-state fermentation process gives food manufacturers the ability to turn bland, plant-based proteins and other by-products into rich, natural umami flavours. Unlike conventional solutions that rely on additives like yeast extract or MSG, BioMush’s technology creates all-natural, clean-label products that appeal to the growing demand for healthier, more sustainable food ingredients.

BioMush’s bioreactor, which is ready to be rolled out, is able to serve industrial clients with a process which offers the bioreactor to be installed directly at the client’s production site. There is no need to transport side-streams around the globe.
The BioMush process is designed specifically for their clients. The process allows BioMush to tailor the solutions to customer’s available side streams and desired flavour profiles for the end products. This approach requires modest capital investment from clients and operates at competitive production costs compared to traditional flavouring methods, such as yeast extract.
“Our primary clients are food manufacturers that have both usable by-products and the need for the flavour products. To our knowledge, we are the first and only player able to deliver this type of technology, which can be integrated into the client’s process,” says Kaisa Karhunen, Chief Executive Officer at BioMush.
“The clear competitive edge is that the solution becomes part of the customer’s process. The solution is brought directly to factories. It doesn’t require the customer to have their own production facility.
